I am being asked to plot the Fermi-Dirac Function by using an interactive energy level, with an initial energy level being pre-plotted. Is it possible to do this without using GUI? I have the GUI way figured out but I fear it is not at all what I am being asked to do.

In MATLAB, "GUI" is the same thing as "figure" (and both are the same thing as "window"). Figures / windows / GUI can contain controls and/or drawing areas. So plotting without a GUI would require plotting without a figure, which would require plotting to the command window, which would require "line art", which is pretty tacky.
