showing point source data with Latitude and Longitude on Meshgrid

i have station data with latitude and longitude, i want to make a meshgrid or any feasible surface with given lat/lon and plot the data as map. the number of data points i have is 500 with respective lat/lon. any idea will be very helpful...Thanks in advance
