actxserver() is only available on MS Windows versions of MATLAB.
There is no way to use ActiveX to control MS Word on OS-X.

https://www.libreoffice.org/ LibreOffice is the successor to OpenOffice. It provides applications, but it also provides libraries that can be linked against, such as if you were to use loadlibrary() within MATLAB.

See https://api.libreoffice.org/ for the interface documentation. Java interface is documented and C++ interface is documented. You should be able to use either.
To use the C++ interface you would use loadlibrary()
