The image acquisition toolbox is helpful.

Also, there are several hardware support packages you can install under the Add-Ons in the Home tab.

I've installed the MATLAB Support Package for USB Webcams and the Image Acquisition Toolbox Support Package for OS Generic Video Interface hardware support packages.

It's been pretty straightforward for me. You can see some examples in the following MATLAB Answer posts:
