Can you convert an image or video into a wavelength plot (spectrum)?

I am a beginner in matlab and I am currently experimenting in the lab.

I measure laser light source with ccd (rgb) based on 1920 * 1080.

Can I convert an image or video from ccd (rgb) to a wavelength plot (spectrum)?

I would appreciate it if you could teach me the script.

I have a picture with an example. The picture is the plot I want.
