How can I measure the rotation of an object using Matlab?

Hello all,
I am trying to measure the rotation of aircraft control surfaces using one camera mounted on the fuselage. This idea is still in concept form so I do not have any example pictures, but I've attached a picture that is representative of the camera's position. I have tried scouring the forums for a similar solution, but I cannot seem to find one. I know the Matlab camera calibration toolbox can accurately measure rotation and translation of a checkerboard pattern (which could be attached to a control surface, like an aileron) but that seems to be primarily for calibrating a camera, I have no idea how to then use that information to extract rotations of an aileron using the images recorded. I am hoping that because a control surface only rotates about one axis, the solution might be a less complicated one than if it were to rotate/translate more in 3D space.
