how to extract elevation data out of a geotiff image(dem data) or a .tif format image?

we are having several images of .tif format & we need to get the dem information out of it.So kindly help us in finding the solution to it.
And can you just help me in knowing how to overlay the building or man made structure on the modelled surface using matlab.
