hi all could you explain to me why the three phase voltages in this video are not sinusoïdale and how to change them To be sinusoidale?

Most Motor control applications use Space Vector Modulation which is not sinusoidal but lets you operate as if your voltage was a little higher than it actually is: https://www.motioncontroltips.com/what-is-space-vector-pulse-width-modulation-svpwm/
you can simply not use space vector modulation and use sinusoidal modulation instead.
