How to evaluate model in embedded coder support package without the real hardware at hand?

I have found that MATLAB supports embedded system development through its embeded coder support package, Specifically I have to design a feedback control for power electronics converter using Texas Instruments C2000 MCU (TMS320F280025C). I have watched videos and got an overview on how to use the coder support package with the MCU.I have ordered the MCU months before but it had not arrived yet. How can I evaluate a model without the real MCU connect to the PC?
Please provide guidance.
