I would like to know what sort of sample time support I can expect from the Real-Time Windows Target or xPC Target.

The documentation has been updated for Release 2008a (R2008a). For previous product releases, read below:
If you are running the Real Time Windows Target, you can run models at sample rates up to 10 kHz.
RTWT runs the target application at a higher priority (i.e ring 0) and runs other windows applications tasks in the background.
If you are running xPC Target, the Target PC can be running models achieving sample rates approaching 100 KHz, depending on processor performance level The xPC kernel is tuned for minimal overhead and maximum performance. The xPC kernel running on the Target machine dedicates all its resources to the target application
