By default, MATLAB is installed in the following locations:
Windows (64-bit):
C:\Program Files\MATLAB\R20XXx (64-bit MATLAB)
C:\Program Files (x86)\MATLAB\R20XXx (32-bit MATLAB)
Windows (32-bit):
C:\Program Files\MATLAB\R20XXx
Please note that during installation it is possible to select a custom installation directory for MATLAB. If you have installed MATLAB in a nonstandard location and cannot locate it, you may be able to locate it by searching your system for "matlab."

on ubunto i navigated to the following:
where R20XXx is the verison you have - mine was 2019b
you can then run matlab using from the terminal using 'matlab'
I also added this directory to path by editing the following:
sudo nano /etc/environment
you can then run matlab from anywhere from terminal
