Matlab mobile plot functions

I would like to plot some data in MATLAB Mobile, access the plot and then continue processing back in the code. It won’t allow the plot to draw and be accessed while waiting for the code to finish.

When you say "access the plot", do you mean that you want the program to access the properties of the graphics objects? Or do you mean that you want to getframe() the plot? Or do you mean that you want the user to look at the plot, make a decision, and then continue executing the code after having made some kind of input?

Following this, (I am not the one who initiated this question but I found it looking for another answer), maybe you could be of help?
I'd like to know how to access characteristics of a plot such as peak response, stability margins (e.g.) on the MATLAB mobile app, I can't seem to know how to do so.

If you're working with MATLAB Mobile and have your variables in the workspace, you can still perform detailed analyses using specific MATLAB functions. While MATLAB Mobile supports basic plot interactions, for more in-depth analysis—like determining peak response or stability margins—you'll want to use functions such as stepinfo and margin.
For example, you can use the stepinfo function on a variable from exporting Acceleration sensor:
info = stepinfo(Acceleration.X);
peakResponse = info.Peak;
Similarly, assuming you have a transfer function, for margins:
sys = tf([1], [1, 2, 1]); % Example transfer function
[GM, PM, Wcg, Wcp] = margin(sys);
