Matrix element deletion for elements greater than an integer

Hi, I hope someone may be able to answer this problem. I have an matrix of temperatures 1001 x 200. What I would like to do is remove single elements of the matrix greater than a specific temperature (I'm assuming they have vaporized), and then plot the same size matrix with the deleted elements. Is there a way of doing this? Thanks, Andy

Tools like plot or surf don't plot NaNs.
