Overlaying GPS data on a map

Hello,
I am interested in creating a map like this in Matlab.
This is GPS data from cars overlaid on a map indicating the frequency by intensity of car journeys.
Could somebody explain to me the process to achieve this?
I have a file containing the GPS data in Lat Long format.
What sort of map would I need? File type? I would like to over lay the data over Ireland, would you know where I could source a suitable map?
How would I overlay the data on it? What would I use in the mapping toolbox? Would anybody have a link to an example?

Thanks, they look good. Do you know where I could get a suitbale map of Ireland? What would be the ideal format?

Probably from the WMS. Here's a good getting started link:
If I get some free time this afternoon maybe I'll try to make a path for me to the Guinness brewery :)
