The answer is probably Yes that it will work, but it probably needs to modify a configuration file.
I do not currently have a Big Sur development environment to test with (not sure my hardware supports it )

https://www.mathworks.com/matlabcentral/answers/246507-why-can-t-mex-find-a-supported-compiler-in-matlab-r2015b-after-i-upgraded-to-xcode-7-0#comment_457556 talks about the technique for older releases. The same kind of file would have to be used, but upgraded to the new version number.
I do not have a recent xcode installed due to diskspace issues that I have not ggot around to fixing.
