When I try to run one of the demo's or, just one of the functions (feedforwardnet(10)), I get the following error:
Undefined function or variable 'network'
??? Undefined function or variable 'network'.
Error in ==> feedforwardnet>create_network at 99 net = network;
Error in ==> feedforwardnet at 67 net = create_network(param);
How do I solve this?

Well, is the variable network defined? If not, the obvious solution is to define it!

I had this same error message when using nntool. Check if you have the toolbox license. >license('checkout','nntool'); License checkout failed.
If you see this, you need to download the toolbox

Try rehashing your toolbox path in case something got corrupted:
rehash toolboxcache
The class network should exist on a path similar to this:
which -all network
C:\Program Files\MATLAB\R2012b\toolbox\nnet\nnet\@network\network.m % network constructor
